    桂林米粉和三文鱼寿司

     

    桂林米粉

         以前工作的学校附近有一家桂林米粉店是我的最爱,每回下班和木耳MSN聊天时我总会叫上一份外卖,他们家的牛腩粉做的最对我胃口,所以第一次和木耳吃饭,也是带他去了这家米粉店,嘿嘿,当时他吃得可是那个大汗淋漓啊,至今记忆犹新。

         没在奥克兰找着桂林米粉的小店,不过超市里倒有干的桂林米粉卖,不知味道是否正宗,买回来试试再说。和下面条一样,烧开水后放入米粉,不过米粉需要不断的用筷子搅拌,水面上会浮有一层白白的粉末。7到8分钟后关火取出米粉,用冷水冲净,然后加入自己喜欢的汤料即可。前一天我特地熬了一锅牛肉汤,直接把米粉放入汤中,加入生菜再煮了2分钟。根据自己对桂林米粉的印象,我还依样画葫芦地加入了炒花生米和鸡蛋,独缺酸豆角,没办法,这玩意奥克兰是打着灯笼也难找滴。吃的时候,我还加了点老干妈辣椒酱,味道出乎意料的好,连木耳都说,滑滑的米粉就是当年那个味,真让人意犹未尽呢!

    三文鱼寿司

         每次周末下馆子我都嚷嚷着要吃寿司,木耳老说去外面当然要吃点好的,吃寿司做啥,自己做才划算呢。总算今天和他一起去超市买齐了材料,距离上次做寿司已有近半年时间,都快忘记怎么做了,不过好在大部分材料的包装上都有制作说明,看看还挺简单的呢。

         材料:寿司米(好的短米也行)、寿司醋、黄瓜、牛油果、三文鱼、鸡蛋、海苔,卷寿司的竹卷帘

         怎样卷寿司我就不多讲了,有以前的博文照片可寻,主要是说说寿司的配料。寿司米煮熟后加入适量的寿司醋,搅拌均匀后放在风扇下吹凉,即成香甜可口的寿司饭了。而牛油果这玩意儿以前在上海都不知道是干嘛用的,到奥克兰才明白,牛油果里的果肉做salad和寿司特别好吃。牛油果要挑熟的买,我买了两个,一个绿壳一个黑壳,明显绿壳的牛油果生很多,硬硬的一点都不好吃,黑壳的剥开来里面的果肉就软和多了。另外做蛋皮也是有窍门的,打两个鸡蛋,在蛋液里加入淀粉、牛奶和少许的盐,然后搅拌均匀,放入微波炉开小火转7分钟,拿出来的时候就是嫩嫩的蛋皮了,这一招是刚从小竹子的美食日记里学来的,效果特别好。

          准备好配料后,就可以开始卷寿司了,木耳今天表现很好,一个人卷了8卷寿司,我在一旁打下手,边看边吃,那个过瘾啊!我们一致认为,寿司还是三文鱼的最好吃。
