    炸酱面

         爱看韩剧的人或多或少都看见过韩国人吃炸酱面的片段,无论男女,吃起来嘴的四周围都会留下一层酱,油油的,煞是诱人,真的有那么好吃吗?老北京也有炸酱面,我记得以前在伍京堂吃过,是那种圆滚滚的粗面条,味道一般,酱汁也没那么浓。在奥克兰我买过韩国的炸酱面,别看只是一包速食面,里面的酱料却是很正宗,浇在煮好的干面上,一拌即化,十分地入味。吃过这个,国内的什么飞碟炒面只好排开去了。不过木耳不肯让我多吃速食面,我只好想着法子自己做。正好很早以前买的韩国黑豆酱一直没用过,家里还有半包韩国面条,嘿嘿,真是万事俱备,只欠东风啊!
     
    1. 准备菜码:打两个鸡蛋,胡萝卜、黄瓜和黑木耳切细丝,浸泡过的绿豆芽适量。
        起油锅,倒入鸡蛋液炒蛋,炒完盛出。
        再起油锅,炒胡萝卜、黄瓜和黑木耳丝,炒软后倒入绿豆芽和炒蛋,继续翻炒数下。
        加少量的糖、盐、味精调味。只可以加一点点,因为酱会比较咸,菜码要淡一点,拌起来味道就正好。
    2. 炸酱:猪肉丁、香菇丁和豆腐干丁准备。四大勺黑豆酱(豆瓣酱也行)加开水化开。
       起油锅,爆姜末、蒜茸和葱花,倒入猪肉丁,加料酒翻炒,八分熟后加香菇丁和豆腐干丁。
       加入化好的黑豆酱,搅拌均匀,开大火,炒酱。炒的时候如果太干,可适量加水。
       加糖(要多些)和味精调味,酱本来就是咸的,所以不用加盐,我加了很多糖,感觉才刚刚好。
       继续炒酱,直到酱汁炒浓稠,关火,盛出。
    3. 下拌面,沥去水盛出。
    4. 面条上加一大勺菜码,一大勺酱,拌开,即可食用。
     
         我和木耳两人“哗啦哗啦”一大碗就下去了,这个酱汁和面拌在一起别提有多对胃,再加上丰富的菜码,引得两人食欲大增。只可惜家里的面条剩余不多,我们吃了都感觉不太过瘾,看来下次得多准备点面条。吃完照镜子,呀~~我嘴边也是一圈油油的酱诶!
