    菜肉大馄饨和煎馄饨

     
         休息天和木耳一起做饭,他说想吃饺子,我说吃馄饨吧,挺想念上海菜肉大馄饨的味道。反正都是面食,随便哪个他都馋,嘿嘿。我们去超市买了馄饨皮,肉馅和菜心,这里没有荠菜,怪遗憾的,上海人都知道大馄饨里最鲜美的部分就是荠菜了。算了,不管了,食欲来了,挡也挡不住,就拿菜心替代吧!
         回到家,木耳做馅,我包馄饨。没想到粗线条的木耳还挺“老据”,看他拽着两把菜刀“咔擦咔擦”切菜心,有模有样的,煞是认真。他还提醒我要挤去菜里的汁水,再放到肉馅里搅拌,否则煮好的馄饨馅里都是水。除了肉馅和菜心,我们还加了香菇丁,因为我想起“吉祥馄饨”里的香菇馅,那香味啊,真是让人难以抗拒!馄饨一个都没包,我的肚子已经开始咕咕叫了吐舌

    材料: 一公斤肉馅+三把菜心+六个香菇+两个鸡蛋= 70个大馄饨
    1. 肉馅加料酒和生抽,拌匀。菜心切末,挤去汁水。香菇切小丁,越小越好。
    2. 把三种材料混合在一起,打入两个鸡蛋,加适量植物油和糖、盐、味精调味,搅拌均匀。

    3. 取50g馅包在馄饨皮里。这里的馄饨皮和上海产的略有不同,比较干比较滑,所以我包的时候适量沾了些水。
       木耳让我包得大一点,吃起来过瘾。瞧,我包的馄饨一个个都像大块头似的 大笑

    4. 煮一锅开水,下馄饨,馄饨浮起来后再加一次冷水,水开即可。
        看,煮好的馄饨皮还有点透明呢!
        木耳很考究的做了汤料:紫菜+虾皮+葱花+胡椒粉,本来他还想做蛋皮,我觉得麻烦,就省略了。(其实是因为我已经饿扁了!)

         瞧,木耳吃得那个香呀!每个馄饨都包得实实在在的,我吃十个就已经很撑了。唯一美中不足的就是缺少了点荠菜的鲜味,不过其余一切都很完美,我又开始忍不住想念家乡了……
     
         第二天,我把剩余的馄饨煮熟沥干,做了油煎馄饨。木耳那个不亦乐乎呀,什么煎炸他就爱吃什么。不过煎馄饨的确很美味,蘸着辣酱油吃,非常的“上海”!

    呵呵,我又个朋友就叫晓阳。原想进来更正荠菜之误的,爸爸抢先一步了。芥菜奥克兰也有,荠菜好像在公共绿地上见过,没敢去挖。

      馄饨做得不错,无论汤的、煎的,取个招牌名,就叫“晓阳馄饨”,夫妻合伙经营嘛,哈哈——
      指出个谬误,应是荠菜,不是芥菜,形状上相去甚远。
