    小弄堂葱油饼

          葱油饼不知道多少年没吃了,小时候的印象很深,葱油饼的那股香味太诱人,放学回家花5毛钱买一张饼,可以小小的解一下馋。长大后,卖葱油饼的摊子少了,葱油饼的味道好像也变了,很少能看到放学后孩子们满手油腻津津有味啃葱油饼的景象了,取而代之的是KFC和麦当劳的垃圾食品。木耳很怀念小时候吃葱油饼的感觉,一听我在网上找到了做葱油饼的方子,兴奋得要命,口水也差点流下来,对于小时候零花钱甚少的他来说,能吃张葱油饼就是件很幸福的事了 大笑 好吧,蜡娇就给你做一回!

          网上的做法很详细,但做之前我还是有点担心面粉的问题,过去我揉过好几次面都不太成功,生怕这一次又栽在同一个环节上。不过幸好有的是时间,我特地提早开工,就为了把这个面粉搞定。

    材料:中筋面粉400g+4调羹量,葱花一大把,植物油8调羹= 4张大葱油饼 (大的吃起来过瘾!)

    1. 烫面:400g中筋面粉加220ml左右开水,一边加面粉一边加水,并用筷子搅拌,直至均匀形成面疙瘩后,放在一边稍凉。

    2. 做油酥:取一小碗,放入4调羹面粉,8调羹植物油用大火烧热,倒入碗中和面粉搅拌,加葱花和盐,制成油酥。油酥就是葱油饼又咸又香的关键所在。

    3. 揉面:把烫好的面揉匀,若太湿再继续加面粉,若太干再适量加水,直至面粉变成不黏也不干的一团即可。(这个过程会让人很抓狂,一定要有耐心。)

    4. 把面团分成四份,先取一份,擀成圆形的大薄皮,涂上油酥均匀的抹开。然后把面皮从下方开始往上卷,油酥在里,卷成一长条。长条的两端各朝不同方向转成两团,底部并拢,按压成圆形。最后再擀成圆形的大薄饼,这时,面饼里各个角落都有油酥,和千层饼有点像。

    5. 起油锅,放入饼胚,用大火煎2-3分钟即可,因为面粉烫过已熟,不用煎太久。

          别看这才5个步骤,我总共做了两个小时,揉面和擀面花时最长,不过一回生二回熟,以后手脚就快了。木耳尝后,直说好吃,我自己觉得油酥还应多放些,味道就更浓了。这回做成功了葱油饼,我对制作面食也更有信心,不怕不怕啦~ 嘿嘿!
