    苦瓜两吃

     
         我来奥克兰之后,几乎每周都要做一回苦瓜,苦瓜清火解毒,又能降血脂,有助减肥,当然目标不是我,是我家的木耳,哈哈,每回他在我的“火眼金睛”下只好乖乖地全部吃完。大笑
         这里没有新鲜的苦瓜,超市里也只卖从国内进口的冷冻苦瓜片,不过好在全切好了,回家后只需稍稍加工一下就可以下锅,就是颜色不好看,一熟就变黄,不像新鲜的苦瓜那样翠绿。
         苦瓜有很多做法,我一般两种方法换着做:苦瓜炒蛋和苦瓜炒肉片。

    苦瓜炒蛋:

    1. 苦瓜切小丁,放进清水中先煮一下,去苦水,取出沥干。

    2. 打三个鸡蛋,将煮过的苦瓜丁倒入,加糖、盐、味精,搅拌均匀。

    3. 起油锅,倒入鸡蛋和苦瓜的混合液,快速翻炒,等到苦瓜丁和蛋块黏合在一起成型时,关火盛盘。

    苦瓜炒肉片:

    1. 苦瓜切薄片,放进清水中煮一下,去苦水,取出沥干。猪肉切小片,备用。

    2. 起油锅,爆姜末,倒入肉片快速翻炒,加料酒,盛出前用湿淀粉勾一下芡。

    3. 起油锅,倒入煮过的苦瓜片翻炒,炒热后,加入之前的肉片,一起翻炒。

    4. 加糖、盐、味精调味,开大火收汁,盛盘。

          两种做法都十分的简单,但苦瓜的味道是不一样的,虽然都煮去了一次苦水,后者却要比前者苦很多。苦瓜切小丁酱在了蛋液里,苦味就分散开来,经过调味,基本吃不出本身的苦瓜味,反而被炒蛋的香味盖住了。但第二种做法中的苦瓜片就不同了,由于它和肉片是分开来炒,所以成品特别的苦。这就是为什么每次我做苦瓜炒蛋木耳就消灭的特别快,但是换成苦瓜炒肉片,他就有点“噶嘚嘚”了,嘿嘿。我推荐那些上火却受不了苦味的朋友可以试试第一种做法,不过,话说回来,论降血脂的强度,那肯定是第二种做法来的有效!
