    木耳大作——香茅椰浆咖喱炒蟹,上海炒酱。

     
         今天木耳下厨,我打下手,做了他最得心应手的香茅椰浆咖喱。椰浆就是浓缩的椰汁,香茅是东南亚特有的香料,长的像竹笋,我也是头一回在奥克兰见到。咖喱里加入了椰浆和香茅,味道就特别的浓郁和丰富。上回在上海的蕉叶,我们也吃了回东南亚风味的咖喱炒蟹,里面的香茅味我还记忆犹新,不过当时木耳直呼不地道。这回他自己动手,买来材料,看看他做的炒蟹,还真诱人诶!

    1. 螃蟹洗净,切块,保留蟹盖。

    2. 起油锅,爆香茅姜丝,倒入螃蟹翻炒,直至螃蟹颜色变红。

    3. 加入椰浆和咖喱,与螃蟹调匀,加少许清水,开中火煮。

    4. 十分钟后,加糖、盐、味精调味,加香葱,开大火收汁,装盘。

    上海炒酱是道功夫菜,不但材料要准备很多,而且炒起来很费时间,所以等到木耳在家,我们才做。

    1. 花生拨皮,豆腐干、猪肉、竹笋分别切丁。

    2. 起油锅,分别煸炒一下花生、豆腐干丁、猪肉丁和笋丁,盛出备用。

    3. 起油锅,炒甜面酱,炒匀后,加入所有的材料,加水,不断翻炒。

    4. 加糖、盐、味精调味,开小火煮片刻。

    5. 炒酱均匀变浓后,关火,盛出。

       很好嘛!取长补短,相得益彰。据我经验,甜面酱无须起油锅煸炒,只要将丁料煸炒后,倒入甜面酱(加少许水)即可,加调味后起锅。这样酱汁较浓稠,否则酱汁干燥,见丁不见酱。蜡娇木耳不妨按此法试试。
       很馋涎你们的咖喱炒蟹。
